Aunty Shirley and Tiffany (cousin) came over to bake cookies cos it felt necessary to do something for CNY! Haha! (Oh what an excuse not to do USP readings!) So, the following filled my whole day!


Oatmeal nutty, bitter chocolate cookie! (:



Cornflake Sesame Shortbread?

This one is major aggaration… haha! We kinda made it up.. But it turned out nice.. like a shortbread… so haha!

A CNY Goodie.
Makes 4 Trays.
1.    Mix softened butter (slightly more than 3/4 cup) with ½ - ¾ cup sugar until creamy with a fork.
2.    Add in a few drops of vanilla essence and a small egg.
3.    Fold in 2 cups un-sifted plain flour. Add in a desired amount of black sesame seeds. (More better!) Knead everything together.
4.    Stir in ¾ of a medium pack of crushed cornflakes.
5.    Roll out small balls of dough and coat with remaining crushed cornflakes.
6.    Bake 180 deg 10 mins.  

ALright.. the flour is unsifted cos… we were lazy. haha! man, what a long day, doubt i’ll be doing this again very soon… :S

 Warning: Lengthy, disjointed post :P

Got to try this superbo, spicy hot Tom Yum soup, generous amounts for $5 only! At Le Meridien, nice place to go to, especially since it’s so near church… you know, rather than just, Han’s!

It’s in the basement foodcourt, it spans about 3 shop spaces, you won’t miss it! (There’s only 2 thai food stores, this is the green, bigger one!) Man, I was sweating over it, but it’s not the hottest around in town though! Mm..

Today, I met up with David for dinner over at Peaberry & Pretzel’s. A nice small, Al Fresco dining place hiding away at Sunset behind the multistorey carpark! Obviously, the nuisance-to-eat-with Mag opted to sit outside under the sunlight so she could take nice photos :S… Sigh me..
Anyway, this was a huge plate… seriously HUGE plate of German Pork Knuckle, served with Saurkreut (the things you find atop your Bratwurst Sausage) and Potatoes with a good serving of Mustard (which tasted like Wasabi unfortunately :S). Meat aside, I loved the way the potatoes and saurkreut was cooked! (:

Before…

Well, this was way too much for 2 persons.. The meat was, well, needless to say, fatty, slightly overcooked - tough, but not bad overall! I guess they had to cook it that long to reach the Roast Pork crisp skin consistency.. Just a pity they drizzled too little sauce over!

I was like sawing through what seemed like fried pork with a crispy skin and tender inside.. haha though it wasn’t.

 

And after…

The poor chunk of pork was finally de-meated. Oh man, protein overload! Hah! Quite like this place cos it’s not crowded (cos it was like 6pm, nobody was there yet!) and, they serve cute little cups and a little water jug to go with! (: Interesting..

I can’t believe this, I never thought I could trust a recipe that came out of …. Today newspaper… maybe it was Straits Times, sorry can’t remember.. anyway point is.. the NEWSPAPER. Haha.. I saw the recipe and decided to cut it out.. and … What a pleasant surprise! Who would have thought the recipe didn’t turn out to be some chapalang recipe the ‘top-chef’ interviewee gave as his obligation, meanwhile, cutting away some ’secret ingredient’. BUT as Kungfu Panda puts it…
The Secret ingredient is………… nothing.

Hmm… Maybe I’m consoling myself for feeling bad after doing badly for Chemistry Common Test - bad I don’t mean like B or C ok? Bad.. Next to my grade she wrote: " :( Way beneath what you’re capable of! " Hmm.. see, I feel really silly now! :/ I’m not as smart as I think eh? Haha!

So anyway, what a great Saturday to self-console and rebuild my self-esteem! Ha! OK, just kidding… (: So, I made these!

 Chocolate Chunk Walnut Cookies

Usually, I tend to stick to the same proportions and ingredients once I think I’ve found the best one. (Haha.. I guess I’m the kind who dislikes unnecessary change. Unadventurous? Maybe!) Anyhow, now I try not to use Hershey’s Choco Chips; especially when I’m feeling generous, my mum finds it tastes better to roughly chop up some dark chocolate that you’d like. It was accidental actually - previously, I ran out of chips so I just crumbled in some leftover Lindt chocolate bar I got from MG friends and she liked it! For this, I used Lindt’s 70% Cocoa (thin).

Coffee Muffins with Raisins

 

Mm.. I had no suitable muffin cups, so I cut some baking paper. It looks quite pro though! Haha! (: Maybe I’ll just continue doing this!

Oh, and this morning, my mum and I ate orange muffins from Coffee Bean & Tea Leaf. Both of us are totally not fans of ‘cake-like’ muffins. So, they failed our tastebuds, sadly… :/ Taste wise, I felt the orange was lacking, otherwise, it’ll make a pretty decent raisin cupcake! (:

That aside, almost everybody (ok, exaggerating, a bit hah!) is at Hillsong conference!! While I agonise over my CTs.. Haha! But been hearing good things, though they seem to be really tired! Can’t wait to the day I get there! (: He’ll will make me a way!

Just as I was feeling that time was plenty (especially after CTs)… Haa!

The refridgerator had:
- a pack of yoghurt expiring in a couple of days
- half a lemon in a plastic bag… my.. don’t know how long it was in there…
- no more vanilla essence :/ but had almond essence! (:

And then somehow.. this happened! ",

Surprisingly enough, it was tangy and the almond gave an extra kick! ", Not bad! Moist-ish… not really a poundcake! Teacake?

Chunked Banana Muffins!
 
Ahh.. yes, finally, I got what I wanted!  
This was my first attempt at using the mini muffin tin.. And boy, the tin is really a good investment.. For some reason, the muffins turned out perfectest ever! Finally, I think I’ve found the perfect ingredients and proportions (to my liking) for any muffin, after many many many many.. and many.. trial and errors since I embarked on my ‘muffin project’! Haha! These are ultra light, moist, fluffy, yet bread-like! Unlike the usual tender kinds which are more like a cake rather than a quick bread which is what a muffin is essentially! (: Yay.. Oh you see those chunks in there? I just wanted to add something to the plain batter, and use up my bananas of course! This shall put an end to my muffin project which was inspired after eating the blueberry and carrot muffins with my Mom at Cedele by Bakery Depot, which was what, in my opinion, defines The Muffin. Alas!
